Udo is a delicacy vegetable in Japan that is hardy and is harvested like asparagus in the spring.

Aralia cordata Thunb.
Udo dies down completely in the autumn, and comes with new strong shoots in the spring which are harvested about 20-30 cm long and prepared like asparagus. Mild interesting taste.
The plant otherwise smells very fresh and good.
Give it plenty of space, because it can grow up to 4 m high in one season and spreads 2 m to the sides.
The seeds must have 2-3 months of cold to germinate. Best to sow in autumn, but there is still time now in spring.
Always take care of pots that don’t germinate and store them somewhere they won’t dry out! Then they can have another winter.
