We have grown the well-known cultivar ‘Hoffmann Schwarze Pfahl’ for some years on the basis of seeds from several good seed producers, and have worked a lot with selection, and consider the seeds we have to represent good maintenance. The seeds we have now are from 2021 and 2022, so we sell them to growers who can live with a somewhat lower germination capacity, which we then compensate with a large portion.

Selection in autumn 2020, of which the top was put back in the soil and allowed to set seed in 2021 and 2022.

Black salsify is a perennial root vegetable that is grown as such and the roots are considered by many to be a delicacy. But the leaves and flowers can also be used raw or processed. The plant is an accumulator plant (which draws up minerals from deeper soil layers), and the cultivation also contributes to deep tillage, both due to deep absorption and because the roots leave vertical channels that make the earthworm’s work easier. Flowering over a long period of time also makes it a good insect plant.
